We present a simplified version of a beverage featured on the seasonal drinks list. Designed as a party-sized prepared mix that is bursting full of tastes associated with Christmas time, rendering it ideal for your celebration. Any leftover syrup for breakfast cocktails, puddings, or to mix more rounds of the drink.

Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
For the Citrus Syrup: Put all the components inside a pan, bring to a simmer, mixing until the sugar dissolves. After that, remove from the stove and let it to reach room temperature fully. Pour to a sealable bottle, seal keeping it in the refrigerator, where it will keep for up to a month.
Preparing the Batch Mix: Mix every liquids in a large bottle, allow it to infuse for an hour, then strain , ideally through muslin, making it fully clarified.
For serving: Measure 85ml of your batch mix into a cocktail shaker filled with ice, and agitate carefully for a minute to chill. Strain to a cold coupe glass or similar, garnish with a few cranberries and finish by giving it a light spray of the essential oil over the top.
